Because OPENER Chocolate specializes in raw chocolate, our cassata features generous chunks of our meticulously crafted raw chocolate as a star ingredient. It's a cassata that will satisfy even the most discerning chocolate lovers.
※The chocolate uses Ecuador Arriba Cacao (RAW & USDA organic certified), which is said to account for only about 2% of the world's distribution.

・Fruits Soaked in Spirits
Organic and pesticide-free/chemical-fertilizer-free fruits are soaked in spirits (using beet-derived whole sugar) in our workshop. They bring a pleasant tartness and depth of flavor to the cassata. The fruits included are American cherries, orange peel, raisins, and lemon.
※Spirits: Organic red wine (Vegan certified), Cointreau, and rum (Vegan Friendly) are used.

・Gluten-Free Organic Rice Flour Cookies (Earl Grey)
Gluten-free cookies primarily made with organic rice flour. They have a subtle Earl Grey aroma and a crunchy texture that adds an accent to the cassata.

Cassata Base

The "fromage" dough, made from strained organic soy milk yogurt, is combined with OPENER Chocolate's special "fresh cream."Because no animal-derived ingredients are used, it's rich yet light, with a smooth melt-in-your-mouth texture that enhances the deliciousness of each ingredient.
