【What is "Raw Chocolate"?】
Raw chocolate is "unheated chocolate." Regular chocolate is produced by roasting cacao at temperatures above 100 degrees Celsius, primarily to bring out a "fragrant" flavor.
In contrast, raw chocolate is made from cacao processed using a special method (often sun-dried instead of roasted) under low-temperature control, below 48 degrees Celsius.
This gives it the following characteristics:
・Enzymes and nutrients are preserved
It is said that the enzymes and ingredients beneficial for health and beauty found in cacao can be consumed without being destroyed by heat.
・You can enjoy the natural flavor of cacao
You can experience the fruity taste of cacao as it is.
・Makes you feel happier
Phenylethylamine (PEA) and tryptophan contained in cacao are said to activate the secretion of the happiness hormone "serotonin," but these are susceptible to heat. Therefore, it is said that these effects are largely lost in regular chocolate made from roasted cacao. Raw chocolate can be considered a precious chocolate that makes you feel "happier."


Uses Ecuador Arriba Cacao (RAW & USDA Organic certified), which is said to account for only about 2% of the world's distribution.
