About In-Person Courses

A raw chocolate making course that will take you from complete beginner to master.

This is a one-on-one, in-person course. It is recommended for those who want to learn at their own pace, adjust the class time to suit their schedule, or proceed while asking individual questions and seeking advice.

On the final day, there will also be a mini brand-making course to help you create your own original chocolate.

The course will be held in a relaxed atmosphere, a little removed from daily life. We hope these two days will help you recall your original sensibility and intuitive senses, leading to your future.

[What to bring] Only an apron and writing utensils are required.

[Cancellation Policy]
Cancellations made 20 days or more prior to the event will receive a full refund (you will be responsible for the bank transfer fee only). For cancellations made after this period, refunds may not be possible, but you may transfer your booking to the next scheduled event. Please feel free to contact us with any questions.

Schedule

[Day 1]

A day to learn the basics of chocolate and raw chocolate and put them into practice.

● Lecture

Basic knowledge of cacao, basic knowledge of chocolate making, about raw chocolate, considerations for making chocolate, basic approach to adjusting flavor, ingredients used in raw chocolate

● Practical session

・Dark Chocolate: Make dark chocolate, which is the basis of raw chocolate making, while finding your preferred sweetness.
・Blended Chocolate: Nutrient-rich chocolate made without "tempering." You will also gain a practical understanding of tempering by comparing it with dark chocolate.

[Day 2]

You will learn to make various types of raw chocolate and explore "your own unique chocolate."

● Hands-on practice

Milky Chocolate: Make mild-tasting raw chocolate without dairy products, using ingredients like raw cashews.

Bonbon Chocolates: Make raw bonbon chocolates filled with soft ganache.

White Chocolate: Make white chocolate without dairy products. This versatile base can also be used for chocolates made with herbs or fruit powders.

Colorful Chocolates: Make colorful and visually appealing chocolates using natural ingredients (such as fruit powders and vegetable powders). Color them as you like. We will also share tips for beautiful coloring.

Mini Brand-Making Course

Examples: Discovering your unique chocolate by recognizing your own sensibilities and stories.

Mindset for creating an original brand or chocolate.

Three exercises for building a brand.

Trial production of original chocolate.

I'm a complete beginner, is that okay?

Yes, it's fine. The curriculum is designed so that even complete beginners can make raw chocolate.

I want to sell raw chocolate in the future. Can I sell products made using this recipe?

Yes, that's fine. (Provided they are made in a facility with a confectionery manufacturing license and meet the conditions for manufacturing and sale.) In addition to the ingredients used in the recipes, the text also lists other ingredients that can be used, so you can refer to that to create your own original raw chocolate.

How have previous participants utilized the course?

A. Many of our past students have utilized what they learned in various ways: by opening their own booths at events and markets, adding value to their own brands, using them as cake decorations, giving them as gifts to family and friends, or incorporating them into their own sweets.
