As OPENER Chocolate specializes in raw chocolate, this cassata features an abundance of our special raw chocolate, making it a star ingredient. It's a cassata that even chocolate lovers will enjoy.
※The chocolate used is Ecuador Arriba Cacao (USDA Organic certified and Raw), which is said to account for only about 2% of the world's distribution.

・Fruits marinated in Western liquor
Organic or pesticide/chemical-free fruits are marinated in Western liquor (using beet molasses sugar) in our workshop. This brings a pleasant acidity and depth of flavor to the cassata. The fruits included are American cherries, orange peel, raisins, and lemon.
※Western liquors: Organic red wine (Vegan certified), Cointreau and rum (Vegan Friendly) are used.

・Gluten-free cookies (Earl Grey) made with organic rice flour
These gluten-free cookies, primarily made with organic rice flour, have a subtle Earl Grey aroma and a crunchy texture that adds a delightful accent to the cassata.

Cassata Base Dough

We combine a "fromage" dough made from strained soy milk yogurt using organic soy milk, with OPENER Chocolate's special "fresh cream."Because no animal ingredients are used, it is rich yet light, with a smooth melt-in-your-mouth texture that enhances the deliciousness of each ingredient.

A. Yes. It is made exclusively with plant-based ingredients, without any animal products.

Q. What is raw chocolate?
A. Raw chocolate is chocolate made using cacao that has not been roasted and processed at low temperatures. Unlike conventional chocolate, you can gently experience the original aroma and taste of cacao.Its melt-in-your-mouth texture and aroma are very delicate, and many people feel it is "rich but not heavy in the aftertaste."

Q. How should I store it, and what is its shelf life?
A. Please store it frozen (-18℃ or below). When serving, remove it from the freezer and enjoy it semi-frozen. The estimated thawing time is about 5-10 minutes in summer and about 20 minutes in winter. Please consume as soon as possible after opening.

A. Yes. The fruits are carefully marinated in organic red wine, Cointreau, and rum.Although a process of heating to evaporate some alcohol is performed during manufacturing, this product does contain alcohol. A. We do not use white sugar, instead utilizing natural sweetness from ingredients such as beet molasses sugar and coconut sugar. It has a gentle, light-aftertaste sweetness.
