【What is "Raw Chocolate"?】
Raw chocolate is "unheated (=Raw) chocolate." Regular chocolate is typically produced by roasting cacao beans at temperatures over 100 degrees Celsius to achieve a "toasted" flavor.
In contrast, raw chocolate is made from cacao beans processed using a special method where the temperature is kept below 48 degrees Celsius (often sun-dried instead of roasted).
This results in the following characteristics:
・Enzymes and nutrients are preserved
It is said that the enzymes and ingredients in cacao that are beneficial for health and beauty can be absorbed without being destroyed by heat.
・Enjoy the natural flavor of cacao
You can taste the natural fruitiness of cacao.
・Makes you feel happier
Phenylethylamine (PEA) and tryptophan contained in cacao are said to activate the secretion of the happiness hormone "serotonin," but these are easily affected by heat. Therefore, it is said that regular chocolate made from roasted cacao retains almost none of these effects. Raw chocolate can perhaps be described as a precious chocolate that makes you feel "happier."


Uses Ecuadorian Arriba cacao (RAW & USDA organic certified), which is said to account for only about 2% of the world's distribution.
